Side Dish

This fresh and creamy potato salad is made with tender potatoes, crisp cucumbers, and sweet carrots for the perfect balance of flavor and texture. It’s a light, refreshing side dish that’s simple to prepare and perfect for picnics, barbecues, family dinners, or meal prep. Ingredients

  • 2 potatoes
  • 4 soft boiled eggs (one for topping)
  • half cucumber
  • 3 slices of turkey bacon
  • 1 carrot chopped

Dressing

  • 2 tbsp yogurt
  • 2 tbsp kewpie mayo
  • 1 tbsp mustard
  • 2 tbsp milk
  • 1 tsp black pepper
  • 1 tsp salt

Instructions

  1. Wrap potatoes with plastic wrap and microwave for 5-6 minutes or until potatoes become soft
  2. In a pot add water to cover eggs completely and cook for 6-8 minutes on medium heat
  3. After the eggs are cooked, put them in ice cold water for about 5-10 minutes (this allows the eggs to be easily peeled)
  4. Slice cucumber and carrots
  5. Air fry the bacon at 375F degrees or until fully cooked through for about 5-6 minutes
  6. Chop up the bacon into small pieces
  7. In a bowl mix yogurt, mayo, mustard, milk, black pepper and salt
  8. Add in the boiled eggs, soften potatoes, cucumber, bacon and carrots
  9. Smash the eggs and potatoes
  10. Combine everything
