This egg, bacon, and veggie pie is a hearty, flavorful dish packed with crispy bacon, fresh vegetables, and fluffy eggs baked to perfection in a golden, savory crust. It’s an easy, satisfying meal that’s perfect for breakfast/brunch.
Ingredients
- 4 organic eggs
- 1 large tortilla
- 1/2 cup of chopped Roma Tomatoes
- 1 cup spinach
- 1/2 cup Cheddar & Parmesan cheese
- 4 slices of turkey bacon
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Spray the bottom of a round baking pan with cooking oil to prevent sticking
- Lay tortilla flat on baking pan
- Add cheese, chopped tomatoes, spinach and bacon
- In a separate bowl scramble the eggs with added salt and pepper
- Pour the scrambled eggs onto previous pan and add extra cheese as necessary
- Bake at 375F for 20-30 minutes
