Ingredients
- 1 Ib boneless chicken breast, cut into small pieces
- Salt to taste
- 1 tbsp paprika
- 1 tsp garlic powder
- ½ tsp black pepper
- 1 tsp cajun seasoning
- 2 bell peppers, diced
- ½ cup corn, boiled
- 1 onion, diced
- 1 tbsp lemon juice
- 4 tbsp cream cheese
- 1 tbsp oil
Sauce
- ½ cup mayo
- ½ cup sour cream
- 1 tbsp paprika
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 tsp lime juice
- 1 tsp cajun seasoning
- 1-2 tbsp fresh cilantro, chopped
Instructions
- In a large bowl add in the chicken, all the spices and oil
- Mix well until evenly coated
- Heat a pan, add 1 tbsp oil and add in the chicken once hot
- Cook for 3-4 minutes stir occasionally (until fully cooked)
- Add in minced garlic and stir until it turns slightly brown
- Add onion, bell peppers and corn
- Stir until the veggies have softened and chicken is cooked through
- Lower the heat and add cream cheese, lemon juice and water
- Stir until it fully melts and forms a creamy sauce (If too thin, let it simmer)
- Taste and adjust seasoning as needed
- Remove from heat and preheat oven to 380 degrees fahrenheit
- Lightly brush each sides of the tortilla with oil
- Flip tortilla over and add in chicken to the uncoated side
- Sprinkle with cheese and fold up the tortilla
- Arrange the tortillas in a baking pan and bake for 5-6 minutes
- Broil on low for 4-5 minutes to melt the cheese on top
