Chicken Tacos

Ingredients

  • 1 Ib boneless chicken breast, cut into small pieces 
  • Salt to taste
  • 1 tbsp paprika 
  • 1 tsp garlic powder 
  • ½ tsp black pepper 
  • 1 tsp cajun seasoning  
  • 2 bell peppers, diced 
  • ½ cup corn, boiled 
  • 1 onion, diced 
  • 1 tbsp lemon juice 
  • 4 tbsp cream cheese 
  • 1 tbsp oil

Sauce

  • ½ cup mayo 
  • ½ cup sour cream 
  • 1 tbsp paprika 
  • 1 tsp garlic powder 
  • Salt and pepper to taste
  • 1 tsp lime juice 
  • 1 tsp cajun seasoning 
  • 1-2 tbsp fresh cilantro, chopped

Instructions

  1. In a large bowl add in the chicken, all the spices and oil
  2. Mix well until evenly coated
  3. Heat a pan, add 1 tbsp oil and add in the chicken once hot 
  4. Cook for 3-4 minutes stir occasionally (until fully cooked)
  5. Add in minced garlic and stir until it turns slightly brown 
  6. Add onion, bell peppers and corn 
  7. Stir until the veggies have softened and chicken is cooked through 
  8. Lower the heat and add cream cheese, lemon juice and water 
  9. Stir until it fully melts and forms a creamy sauce (If too thin, let it simmer) 
  10. Taste and adjust seasoning as needed 
  11. Remove from heat and preheat oven to 380 degrees fahrenheit 
  12. Lightly brush each sides of the tortilla with oil 
  13. Flip tortilla over and add in chicken to the uncoated side 
  14. Sprinkle with cheese and fold up the tortilla 
  15. Arrange the tortillas in a baking pan and bake for 5-6 minutes
  16. Broil on low for 4-5 minutes to melt the cheese on top
