These soft and wholesome oatmeal blueberry bars are packed with juicy blueberries and made with a buttery oat crumble that’s perfect for breakfast, a midday snack, or a light dessert. They’re easy to make, bursting with fresh flavor, and the perfect treat to enjoy with a cup of coffee or tea.
Ingredients
- 1/3 cup maple syrup
- 1/3 cup peanut butter
- 2 tbsp coconut oil
- 1 cup oats
- 1 cup blueberries
- 1/4 cup water
- 1/3 cup honey
Instructions
- Grease or line with parchment paper on tin
- Over medium heat, add the blueberries and water to the pan
- Bring to a boil and then turn down heat to medium to allow simmer for 5-6 minutes
- Stir until berries have soften
- In a bowl mix the oats, maple syrup, oil, water and peanut butter until firm
- Tip: If oats are too dry add more water or peanut butter
- Pour the oats onto tin and flatten with a spoon then add remaining blueberries on top
- Drizzle some honey for sweetness (optional)
- Refrigerate until set
