Blueberry Oatmeal Bar

These soft and wholesome oatmeal blueberry bars are packed with juicy blueberries and made with a buttery oat crumble that’s perfect for breakfast, a midday snack, or a light dessert. They’re easy to make, bursting with fresh flavor, and the perfect treat to enjoy with a cup of coffee or tea.


Ingredients

  • 1/3 cup maple syrup
  • 1/3 cup peanut butter
  • 2 tbsp coconut oil
  • 1 cup oats
  • 1 cup blueberries
  • 1/4 cup water
  • 1/3 cup honey

Instructions

  1. Grease or line with parchment paper on tin
  2. Over medium heat, add the blueberries and water to the pan
  3. Bring to a boil and then turn down heat to medium to allow simmer for 5-6 minutes
  4. Stir until berries have soften
  5. In a bowl mix the oats, maple syrup, oil, water and peanut butter until firm
  6. Tip: If oats are too dry add more water or peanut butter
  7. Pour the oats onto tin and flatten with a spoon then add remaining blueberries on top
  8. Drizzle some honey for sweetness (optional)
  9. Refrigerate until set
