
Side Dish
This fresh and creamy potato salad is made with tender potatoes, crisp cucumbers, and sweet carrots for the perfect balance of flavor and texture. It’s a light, refreshing side dish that’s simple to prepare and perfect for picnics, barbecues, family dinners, or meal prep. Every bite is packed with fresh ingredients and comforting homemade goodness.
Ingredients
- 2 potatoes
- 4 soft boiled eggs (one for topping)
- half cucumber
- 3 slices of turkey bacon
- 1 carrot chopped
Dressing
- 2 tbsp yogurt
- 2 tbsp kewpie mayo
- 1 tbsp mustard
- 2 tbsp milk
- 1 tsp black pepper
- 1 tsp salt
Instructions
- Wrap potatoes with plastic wrap and microwave for 5-6 minutes or until potatoes become soft
- In a pot add water to cover eggs completely and cook for 6-8 minutes on medium heat
- After the eggs are cooked, put them in ice cold water for about 5-10 minutes (this allows the eggs to be easily peeled)
- Slice cucumber and carrots
- Air fry the bacon at 375F degrees or until fully cooked through for about 5-6 minutes
- Chop up the bacon into small pieces
- In a bowl mix yogurt, mayo, mustard, milk, black pepper and salt
- Add in the boiled eggs, soften potatoes, cucumber, bacon and carrots
- Smash the eggs and potatoes
- Combine everything
